Matcha and Green Tea Require Optimal Water Temperatures

When brewing matcha or green tea, it is not recommended to use boiling water at 100°C (212°F) directly. The temperature of the water plays a crucial role in bringing out the best flavor of each tea.

This is because the tea's flavor components are extracted differently depending on the water temperature. For instance, catechins, which contribute to astringency, are more soluble at temperatures above 80°C (176°F), while amino acids, which contribute to the tea's delicate and rich flavor, are better extracted at lower temperatures around 50°C (122°F).

In other words, the optimal water temperature to control the astringency and enhance the flavor of tea varies as follows:

  • Matcha: 80–90°C (176–194°F)
  • Sencha: 70–80°C (158–176°F)
  • Gyokuro: 50°C (122°F)

On the other hand, teas where aroma is the main characteristic, such as black tea, oolong tea, and Japanese teas like genmaicha or hojicha, taste best when brewed with boiling water at 100°C (212°F) to fully extract their aromatic and astringent components.
